Budda Bowl
I needed to get rid of a bunch of vegetables in my refrigerator so I decided to make a Budda bowl. What’s a Budda bowl? It is a filling dish made with a healthy grain (rice or quinoa), greens, raw or roasted veggies, and beans. Sometimes they are topped with seeds, nuts or sauces for texture and taste.
Here is what I did:
Make 1 cup of black rice (according to package instructions) – What the heck is black rice? Click this link for nutritional info and the benefits of black rice.
While rice is cooking, rinse and chop vegetables (of your choice) then add to the rice ( I usually add vegetables once there is 10 minutes left for the rice to cook- this way the veggies get softened, but you do no lose the nutrition) – I used:

1/2 head broccoli
3 large carrots
1 small red onion
Drain and rinse beans then add to rice and veggie mixture- I used:
1 can garbanzo beans
1 can black beans
Season as desired- I used
3 cloves of garlic
salt and pepper to taste
1 tablespoon olive oil
Top with 2 tablespoons of hemp seeds
Stir ingredients and enjoy this delicious, filling dish!
This will make about 4-5 servings for me.
