Healthy Egg Muffins


We can thank my sister, Amy, for this fun recipe! We use this as one of our meal prep recipes for breakfast and it is a great option packed with healthy ingredients.

Ingredients:

1 dozen eggs

Handful of spinach- chopped in a food processor

1 Bell pepper- finely chopped (or any vegetable of choice)

Garlic Powder

Optional- ground turkey, bacon or sausage

Salt and pepper as needed

Directions:

Whisk eggs and then mix chopped ingredients together and pour into individual muffin tins (we put cup cake holders in the tin for easy clean up).

Bake at 350 degrees F for 12-15 minutes.

I also like to top mine with salsa and 1/4 of an avocado.
