Healthy French Toast
French Toast is one of my favorite childhood treats. With just a few adjustments you can turn a sweet breakfast item into a wholesome option!
2 Egg Whites
3/4 cup milk of choice (I used almond milk)
1/2 tsp sea salt
1/4 tsp vanilla extract
2 tsp butter or coconut oil
8 slices whole wheat bread (I used ezekiel bread)
1. In a pie plate, beat the egg white, egg, milk, salt and vanilla with a whisk until blended. In a skillet, melt the butter. Dip the bread, one at a time, into the egg mixture, pressing the bread lightly to coat both sides well. Place 2-3 slices in the skillet, and cook until lightly browned (about 3-4 minutes per side).
2. Top with maple syrup or fruit.
